Quinoa & Grapefruit--Weird, Good & Easy

Today for my lunch I threw together the cooked quinoa that I made yesterday (cold from refrigerator) and some pieces of grapefruit. I had never tried this until today, but I am becoming more creative in my vegan life. One of my favorite combinations is quinoa and grapes, so I figured this should be good as well. Pairing fruit with grains is one of the easiest snack or meal combos, in my opinion. No fresh fruit? Try dried fruit. Nuts and seeds are a great addition, as are edamame beans.
